



Ive always enjoyed grilling and do so multiple times a week if able. Received a grilla silverbac for Christmas and through everyone’s recommendations here for a first smoke chose pork butt. Thermopro wasn’t able to get here in time and I didn’t trust the built in probe so just went by look and instant read.
Started at 545am at 250 to give myself some wiggle room if the pit temp probe was off by a bit. Bear mountain apple pellets. Added a seasoned and scored block of cream cheese later on in the cook for bacon wrapped peppers. She came off around 6pm for a wrap and rest then dug in. Bone came out clean and easy. Maybe a little dry in spots but overall was super thrilled with the results.
Full disclosure: before this we were doing our pulled pork in an instant pot(after a sear on all sides for SOME color lol). This was miles above anything I’ve ever done before. Wings tomorrow so any advice would be welcome!
