Scadahl & beans, greens & beans, etc is a traditional Italian soup. I’ve been eating it my entire life. A few things I didn’t mention in the video, rehydrated cannelloni beans are preferred, during Lent, obviously the meat is omitted, and cabbage isn’t really traditional but it’s good. Also, I kept half the cabbage back because I wanted the escarole to be the dominant green, and flavor. I looked up Minest and it seems it’s spelled Minestra, which apparently is similar to what I made here but definitely not the same. Minestra from what I’ve read is an Italian wedding soup. Scadahl it seems is escarole in Italian. So although my memory isn’t too good, I got most of what I said right. Give this one a try!!
