
I tried fat down on my first attempt and felt like I overcooked it. I didn’t get optimal bark and so I kept leaving it on the grill and turned out very dry and tasted like roast beef.
This was my second attempt and the gentleman from BBQ Island in Scottsdale basically informed me to just put it on the grill at 275 and wrap when it hits 175. I felt like this attempt had amazing flavor and taste. It was fat side down on the gmc peak prime 2.0
The wife sliced it and I think she did a phenomenal job.

Looks great. Frequently it’s more about the particular cut of meat than anything else.
