For starters, I'm going to make a batch of spinach cheddar biscuits, pickle some radishes, and marinate half a pound of mushrooms.
We're not going anywhere or even opening the doors if we can help it due to a ferocious winter storm, so then I plan to make:
- Tartiflette with mushrooms instead of bacon and topped with an 8 oz wheel of brie
- Roasted Tomato Soup
- Tofu rice bowl w/sesame slaw and peanut sauce
- Potato Pea Curry, Palak Paneer with tofu, and if I have time and energy, I may take a stab at Avocado Naan
We're also going to eat an apple crumble pie I bought for New Year's Eve and then couldn't eat because I got the flu. Fortunately, all I have to do is put that in the oven!

We’re also about to get snowed in. I’m making my family’s favorite potato soup. And I’m trying a new recipe for air fryer stuffed shells.

I’m probably going relatively simple and making the New Years foods we haven’t made yet. Which means stuffing, mashed potatoes, and green bean casserole.
I’ve also had on my agenda for weeks to make baked oatmeal (with frozen raspberries and chocolate chips), and i think I’m going to finally get to it. My husband will likely make baked French toast, which has become a Sunday tradition in our house.
It’s my birthday weekend so I got some vegan orange chicken and chow mien coming my way.
Tomorrow we go to a hole in the wall dumpling place that had the best veggie dumplings I’ve had in a minute.
Sunday morning we do french toast and mimosas.
It’s gonna be a yummy weekend LOL 🤤

I just saved some slightly soft zucchini from the sad veggie section of the grocery store, time to make some bulk batches of zucchini bread!
Chicken divan tonight but substitute the chicken for lots of veg like broccoli, carrots, onions, cabbage, peppers, etc. then tomorrow I’m gonna make vegetarian butter chicken!
