Nice and crusty in my brand new cast iron pan. Prime Dry Aged Pat LaFrieda strip. Reverse Seared, prebaked at 250 until it reached 105 (40 mins), rested 15 mins, then seared hot for about a minute each side flipping every 30 seconds.
