You helped me greatly with the tare for my Tori Paitan the other day ! It was a great success !

I ended up with a simple Shoyu tare (just heated up Shoyu, hon mirin and Katsuobushi and strained).

For aroma oils I used scallion and rendered chicken and duck fat. And duck meat on top.

What an amazing ramen !
