This has become my favorite prepped breakfast. I make it on Sunday night, slice into four pieces, and put each in a separate container. They’ll last about a work week in the fridge.
It looks fancy but it’s not! Add more whole eggs for more protein, or more veggies for volume (onion, bell pepper, etc.)
1 container of egg whites (16oz)
3 whole eggs
2 cups raw spinach
1 pack of cherry tomatoes (about 30)
1/4 cup of lite shredded cheese
1/4 cup almond milk
Makes 4 servings, about 150 calories and 20 grams of protein for each slice.
