For abour 300g pasta, use:

1 medium broccoli
3 large cloves of garlic
Teaspoon of black peppercorns
3 tablespoons blue stilton
Salt to taste
Generous amount of evoo

Cut roses of stem (trim short). Cut stem and put in pot with garlic, evoo, salt and peppercorns. Cover in water and boil. Blender into a soup and reduce to desired consistency. When you throw pasta to boil in apptpriately salted water, toss broccoli roses in gently simmering sauce. Boil pasta for about 8 minutes, finish cooking in sauce with pasta water as necessary. Take off heat and cream using the stilton.

    Honest question since I never had Stilton; how does it taste compared to gorgonzola?

    Oooh this looks delicious! When I do pasta with Broccoli I normally don’t blend the broccoli at all. What I do instead is I boil them w salt and then transfer to a hot pan with garlic and I just smash them with a fork, it creates almost a creamy like sauce. Sometimes I add sausage or guanciale if husband wants meat!
