Dijon Mustard Vinaigrette:
1/3 cup extra virgin olive oil
1/2 cup red wine vinegar
1 T Dijon mustard
1 clove of garlic (grated)
1/2 t salt
1 t honey

Combine in a jar and shake. Will stay in fridge for up to a week.

Salad:
(Choose the amounts and toppings that make you happy!)
– kale
– Craisins
– Walnuts
– Blue cheese (goat cheese or feta would also be great)
– Thinly sliced apple pieces
– Crispy onions (grilled or carmelized onions would also be awesome)
– Add protein of your choice
