Salmon (ginger and citrus)
The festive table has to be crowned by main dish, it doesn’t have to be lamb or Turkey and certainly can be light and so easy to do.
If this year like me, you are going on a smaller scale ( not being around plenty of people just couple of the loved ones) then this recipe is the definite “YES” on your table.
Ingredients
1 kg salmon fillet
1 finely chopped ginger (size of thumb or slightly bigger)
1 or 2 chilli chopped
1x bunch spring onion finely chopped
40ml olive oil
Juice of lemon a big one or times 2 if it’s small
Juice of grapefruit
Juice of orange
Lemon and orange zest
2 tsp whole grain or Dijon mustard
5 tbsp honey
Salt and hints of cayenne pepper
Wrap in parchment paper and cook at 180 or 200C for 15-20 minutes also wrapped up with further parchment paper. As soon as it’s cooked take out of the oven to avoid being dry. Serve with light basmati rice seasoned or flavoured with olive oil and butter base, spring onions and red pepper.
