    Interesting and this got me to thinking about whether sourdough yeast is bottom fermenting or top fermenting. In the beer world, lager yeast is bottom fermenting and works at low temperatures, typically 48-58 deg F, sometimes as low as 35 deg, but never above 58. Whereas ale yeast is top fermenting and works at higher temperatures, typically 65-75 deg F. The time lapse clearly shows sourdough yeast as top fermenting, which makes sense given the temperature – room temperature.
