Mimolette with the "crusts" cutoff! (Mmm my favorite 😅)

I don't think I've ever seen this since first discovering the cheese a year ago, but it makes sense. I know mimolette's mite-y rind lends a lot to it's subtle/unique flavor profile, but it's definitely annoying to deal with without a subtle knife…or even with one tbh.
