My aunt’s very old school and delicious pineapple upside down cake
I started my baking journey modestly and haven’t worked my way to this cake yet, but i can’t wait to bake as well as her!

My mum makes this. It looks identical! Sooooo delicious 😋 Its always my favorite. Sometimes she makes it with tinned pears instead of pineapple and it’s amazing too 🙂

My grandma made almost every Sunday when I was a child, 1960’s. She’d put it in the oven to bake while we ate lunch. Then ate it warm from oven after lunch. Still makes me smile, looks so festive.

Growing up my mom always made pineapple upside down cakes for family gatherings, as she got older I got roped in more and more to help out making them. After she passed in 2020, I took up the mantle and have been churning them out for all the family gatherings (and occasionally by request) since. It’s one of those things that once you’ve got it down, they’re deceptively easy to make.
Pineapple upside-down cake is a seriously underrated cake.

I’m probably as old as your aunt! I love making this, I even put the cherries inside the pineapple rings haha! Sometimes I use apple slices or tinned apricots or whatever, as long as you put lots of butter and brown sugar in the baking tin first you can’t go wrong. Use a metal baking tin, put it on a stove burner to get it hot, melt butter until it’s about 1/4 inch deep or whatever. Err on the side of butter. Sprinkle brown sugar until the butter is almost all absorbed or whatever, seriously don’t stress. Sprinkle cinnamon if you use apple slices. Then, just arrange fruit, plop cake batter by spoonfulls so it fills tin without disturbing fruit, bake. Pro tip, you can use a cheap butter cake mix too, nobody will know and you’ll look like a baking expert 😀🤣
