    Next time try to emulsify the mozzarella into a sauce, use low heat and take some of the pasta water and use it as a base for the sauce, the same with the egg, if you throw it into high heat it will cook and you will end up with scrambled eggs.

    Once you cook the pasta, reserve a good amount of pasta water and drain the rest, add the pasta back to the pan then add the cheese and egg (similar to a traditional carbonara if you primarily just use the egg yolk and discard the whites the sauce will be creamier. Once you’ve throw it all in the pan mix it very quickly, don’t let the egg rest, as you mix slowly add the hot pasta water. At this point the burner should be off, the residual heat of the pan and pasta water should do the work for you. Mix ***until*** creamy, if you stop half way the egg will just cook. Oyster sauce is a good addition, especially if you don’t have actual oysters or a protein to add, next add a little white wine if you have it, it goes well with oyster.
