    This recipe is from Vegan Comfort Classics by Lauren Toyota. It has a potato hash on the bottom followed by tofu scramble, vegan cheese shreds, and kale (I used spinach). After roasting in the oven, it’s topped with coconut bacon, avocado, and hot sauce. It’s my dream breakfast!
