SPICED LENTIL & BACON SOUP
Serves 4
1 quart stock (1.1litre ) & 2 cups water
1 tspn of each coriander cumin
½ tspn of each chilli flakes chilli powder
2 minced garlic cloves 2 tb chopped cilantro
1 cup red lentils 1 large finely chopped onion
1 cup finely diced carrot
1 cup crispy bacon bits – OPTIONAL
1 tb tomato paste
4 tb EV Olive oil – 1 for drizzling after
Juice of ½ lemon (not in picture)
Salt Pepper
TALL JUG USED PLASTIC 2 QUART/LITRE
Ladle was 3½oz
STAINLESS STEEL PAN IS 11″ x 4″
