This latest vintage of Dom Perignon is 51% Pinot Noir and 49% Chardonnay. It spent 8 years on its lees and comes in at 4.5 g/L dosage, which technically makes it Extra Brut (though it’s marketed as Brut).
**Tasting Notes:** light straw color, with very fine bubbles and intense effervescence; somewhat closed nose, offering hints of toast, citrus, and wet rocks; medium bodied, moussy and highly acidic, with tastes of lemon and green apple; long, saline finish; feels tight (not unusual for Dom upon release) and there’s just not as much complexity as you’d hope from something with 8 years of lees aging; I expect it will get better in 3-5 years given the producer but, right now, I’d rather put my money somewhere else (retails for $250-300 USD); 4.1 out of 5
