Recently did the chefs table at Campo at Los Poblanos Historic Inn and Organic Farm and in Los Ranchos, NM. Campo is a farm (Los Poblanos) to table restaurant located in the Rio Grande Valley. Their Inn rooms are fantastic and I would highly recommend staying there for a weekend.
We’ve eaten at Campo many times as it’s our go to brunch spot. I crave the blue corn waffles weekly and the experience is always pleasant.
For Christmas, I gifted my boyfriend the chefs table for this past weekend. We’ve done plenty of omakase around the country and eaten at a handful of multi-starred restaurants around the world. The hospitality that Chef Chris and Sommelier Dillion provided was second to none. We were blown out of the water with the attention to detail and passion that was going into each dish. This truly deserves to be on the Michelin Guide.
Unfortunately I didn’t take photos of the tetela and the tamal, both of which we would argue were the best parts of the meal. They screamed New Mexican culture, tasting like grandmas kitchen went Michelin.

Absolutely love this place. Stumbled upon it while in Albuquerque and became a staple. Have gone multiple times now. Also worth checking out is their library bar
