Ingredients
All-purpose flour – 400g
Bread flour – 100g
Sugar – 5g
Yeast – 9g
Salt – 8g
Water – 378ml
Instructions:
1) In a large bowl, combine 400g of all-purpose flour, 100g of bread flour, 9g of yeast, 5g of sugar, and 8g of salt.
2) Slowly add 378ml of water in quarters, mixing well between additions, until the dough comes together.
3) Transfer the dough to a floured surface and knead for 9 minutes until smooth and elastic.
4) Place the dough in a well-oiled bowl, cover it with a cloth, and let it ferment in a warm place for 1 hour, or until it doubles in size.
5) Once risen, punch down the dough to release air. Turn it out onto a floured surface and divide it into 12 equal pieces.
6) Roll each piece into a smooth ball and place them evenly on a baking tray lined with parchment paper. Let the rolls proof for 1 hour until they expand and take on a bun shape.
7) If desired, score the tops of the rolls with a sharp knife for a decorative finish.
8) Brush the rolls with a mixture of cold water and salt for a crisp crust. Place a baking tray filled with hot water on the bottom rack of the oven to create steam.
9) Preheat your oven to 205°C (401°F). Bake the rolls on the middle rack for 15–20 minutes, or until they are golden brown.
10) Remove the rolls from the oven and let them cool on a wire rack. Serve warm or store in an airtight container for later.
