    It’s a shame the crust is uneven and does not quite reach the center. Can’t really pass judgment without a money shot, but on the whole it looks appetizing in the pan.

    You’d end up with a better sear if there wasn’t so much butter in the pan. Nice use of cast iron though

    Too much butter. It will burn way before you can get a good crust.

    Don’t use butter to sear it, use butter to finish it

    Make sure you tilt the pan and baste it with the butter.

    Not the way I cook. Amazing you were able to use so much butter and still not get a good sear. Got some skill issues you need to work on.

    Cladded steel > cast iron. Hence uneven sear
