I do this a lot. Just like yours.
I WAY over season them (with mostly low salt seasonings) and cook them for what seems like its too long (flipping halfway through).
Sometimes I toss them, sometimes I dont. Gawwwwd. They are so good.

Just going to cook dark meat a lot longer than white meat in my opinion it should be like 175 or 185 minimum inside temperature or else it gives me the hibby jibbies if it’s all slimy inside
