    My favorite grilling steak! If you don’t already know, try buying at a butcher and ask them for outside skirt vs inside skirt. Most of the time you can only get inside skirt because the restaurants snap up the outside skirts. Esp the mexican shops that use them for fajitas. Has more flavor. Though I never complain about the inside cut.

    Yours looks perfectly cooked. If only it wasn’t 15f where I am right now…. 🙁
