    I tend to take all these Korean “our food is awesome” scientific studies with a grain of salt. I was curious how they controlled for placebo here (since kimchi is a food). The study used kimchi powder vs lactose for the placebo. There were 2 kinds of kimchi powder.

    The thing that raises my skeptic radar is the significant weight gain of the placebo group. How does that make any sense? Why would the placebo group gain significant weight (almost 5% fat gain in 12 weeks) by not consuming kimchi, shouldn’t their weight stay near flat? Also with only 90 participants, this isn’t a particularly strong study in my opinion.

    Would boiling it in soups eliminate the helpful bacteria and probiotics?

    Yeah, eating things that aren’t factory processed & filled w/preservatives will help w/that.

    As a Korean who’s still fat after eating kimchi all his life, I can’t imagine what I’d look like without it if this were the case. Also why did the control placebo group gain weight?
