I mean, kitchens are pretty disgusting. Though I used to work in one where everything was on rollers except for the big ass wok burner, which was not heavy. We were able to move everything and get the whole floor, front to back. I had the fry cooks detail the inside when we were slow, and there was a weekly de-greasing protocol. It never matters, fryers are always disgusting underneath. Dust and oil are powerful enemies. The best cooks know this and fight that shit every night. It’s a hard job.
