Ingredients:
1 can Princes Tuna Steak in Spring Water
1 can chickpeas, drained and rinsed
150g cherry tomatoes, halved
200g cucumber, diced
1 small red onion, finely chopped
2 tbsp fresh parsley, roughly chopped
2 tbsp fresh mint, roughly chopped
1 tbsp olive oil
1 lemon, juiced
1 tsp ground cumin
1 tsp smoked paprika
½ tsp sumac
Salt and pepper to taste
Instructions:
1. In a small mixing bowl, combine the olive oil, lemon juice, cumin, paprika, sumac, salt, and pepper. Set aside.
2. In a large bowl, add the chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint and Princes Tuna Steak.
3. Pour over the dressing and mix well.
4. Serve immediately into two bowls and enjoy!
