Chicken Over Rice 🍗🍚

Halal Cart Chicken 🍗
Ingredients:
-3 lbs boneless skinless chicken thigh
-1/2 cup yogurt
-3 garlic cloves, minced
-2 tbs olive oil
-1 tbs onion powder
-1 tbs garlic powder
-1 tbs smoked paprika
-1 tbs ground cumin
-1 tbs turmeric
-1 tbs ground coriander
-2 tsp adobo seasoning (or salt)
-2 tsp pepper
-2 Sazón packets (optional)
-1 lemon, juiced
Instructions:
-add chicken to a large bowl with ingredients above; mix well
-marinate for at least 30 minutes up to overnight
-place chicken on wired baking sheets
-bake at 400°F for about 30 minutes until internal temperature is 165°F
-allow chicken to rest for 10 minutes before thinly slicing
Yellow Rice 🍚
Ingredients:
-2 cups basmati rice, washed
-3 cups water
-half of a red onion, small diced
-3 garlic cloves, minced
-4 cardamom pods
-4 whole cloves
-1 tbs oil
-1 tbs chicken bouillon
-1 tsp turmeric
-1 tsp pepper
-1/2 tsp saffron (optional)
-1 dried bay leaf
Instructions:
-heat a pan on medium heat and add oil
-sauté the onions and garlic until softened
-add the spices and seasonings; mix well
-add the rice and water; mix well
-add bay leaf, cover, and lower heat to low
-simmer for 20 minutes until rice is cooked
White Sauce 🌿
Ingredients:
-1/2 cup mayo
-1/2 cup yogurt
-1/4 cup water
-2 tbs honey
-2 tsp dried dill
-1 tsp onion powder
-1 tsp garlic powder
-1 tsp salt
-1 tsp pepper
-1 lemon, juiced
Instructions:
-add ingredients into a large measuring cup or bowl; whisk together well until smooth
-transfer to a squeeze bottle and store in the fridge
Toppings 🍅
-diced tomato
-diced red onion
-sliced cucumber
-chopped lettuce
