    tasting note:

Sylvain Pataille needs no introduction, right? The Big Burgundy Daddy of Aligoté.

Here we have an Aligoté from 70-year old vines on calcareous bedrock with red clay. Manual harvest, gentle pressing and fermented with indigenous yeast. Moved to the barrel mid-fermentation. Aged for another 12-18 months on old wood.

Quite young and nervous on the nose, needs time to open up – during the hour we have it on the table I never get the feeling it fully opened up.

Lemon, lime and grapefruit jump out. There’s some toast and pastry dough hiding behind it. Delicate note of fresh butter.

You know how you can sometimes smell depth in a wine? One layer after another? Here it’s more a clash between the different aromas – they haven’t fully integrated yet.

Some others called white flowers, that I couldn’t really pick up. But it makes sense – and I would award those points if I was your WSET instructor.

The palette is round, maybe even a bit fat. In a good way. Delicious almond-bitter that extends the finish. Nice salinity. Fresh, but with weight.

We drank this too young. Too tight and not singing as we like it. Try again in 3-5 years.

  2. I had a bottle of this a week ago and thought it was wonderful, definitely will benefit from a little more time but the energy right now is amazing.

The Petit Puits 22’ is crazy right now, if you have the chance.
