i had this for breakfast today and i was almost unable to finish it! it’s absolutely yummy, and the macros are unbeatable!
i make my own cottage cheese dressing, where i add roasted garlic, half a jalapeno and salt + pepper to a jar of cottage cheese and blend until smooth. I use this as a dip for veggies, sandwiches, literally anything. To make it into a dressing, i just add a tiny amount of pickle juice and/or lime juice and its SOO GOOD!!
for the tofu and chickpeas, i just air fried them separately coated in some spices (cayenne pepper, cumin, garlic powder) until they were crispy!
i also added some crispy onions for extra crunch, i just thinly slice some onions and air fry until they are crispy, and they add sooo much flavour and crunch with negligible calories!!
The salad is so good and i think i will be having this every day!!
