This recipe was super simple, I just used store bought pasta and then put some pancetta to cook on low heat (I know that its normally guanciale but I don’t have access to that), and then I added some pepper to the pancetta to toast as well pasta water once all the fat of the pancetta rendered out and was crispy, also shredded like a handful or two of pecorino romano and combined a bit of pasta water with that to form a pasta and then put cooked noodles with the pancetta, quickly incorporated the cheese paste and mixed quick, before adding even more black pepper and cheese to top it off. Salt to taste and enjoy :]
