Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts (pounded to an even thickness)
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably Italian-seasoned)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/2 cup vegetable oil (for frying)
For the Topping:
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp dried Italian seasoning (optional)
Fresh basil leaves (for garnish)
Instructions:
1. Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Season the chicken breasts with salt and pepper.
Set up a breading station: one plate for flour, one bowl for beaten eggs, and another plate for breadcrumbs mixed with Parmesan cheese.
Dredge each chicken breast in flour, then dip in beaten eggs, and coat evenly in the breadcrumb mixture.
2. Fry the Chicken:
Heat oil in a large skillet over medium heat.
Fry the breaded chicken breasts for 2-3 minutes per side until golden brown (they do not need to be fully cooked).
Transfer to a paper towel-lined plate to drain excess oil.
3. Assemble the Dish:
Spread 1/2 cup of marinara sauce on the bottom of a baking dish.
Place the fried chicken breasts in the dish, side by side.
Spoon marinara sauce over each chicken breast, ensuring they are well-covered.
Sprinkle mozzarella cheese and Parmesan cheese evenly on top.
4. Bake the Chicken:
Bake in the preheated oven for 20-25 minutes or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the cheese is melted and bubbly.
For a golden topping, broil on high for 2-3 minutes at the end of baking.
5. Serve:
Garnish with fresh basil leaves.
Serve hot over spaghetti, with a side salad, or garlic bread.
Tips:
Make It Lighter: Skip frying and bake the breaded chicken breasts at 400°F (200°C) for 20 minutes before assembling with sauce and cheese.
Extra Flavor: Add a pinch of red chili flakes or garlic powder to the breadcrumbs.
Storage: Leftovers can be refrigerated for up to 3 days. Reheat in an oven to retain crispiness.
