Greek traditional kotosoupa avgolemono , chicken soup with rice and avgolemono is the Greek medicine, the absolute comfort food either you feel under the weather or if you want a nutritious and cozy meal, you won’t find anything better than this! • ingredients:
– 2lb chicken any cut of your choice
– 1/2 a cup rice for soup ( if you want it thicker and creamier add a bit more, if you want it more soupy add less)
– 2.5lt water for pressure cooker/instant pot ( 3.5lt for regular pot)
– 1 diced big onion
– 2-3 carrots in bite size
– olive oil for sautéing
– salt & pepper
– chicken bouillon ( optional)
For the avgolemono
– 2 eggs room temperature
– lemon juice from 2 whole lemons
– lemon zest
– 2-3 grated garlic cloves
– olive oil for garnish
• instructions:
– into a preheated pot olive oil and sauté the chicken until is lightly browned, then add the onions and the carrots and sauté for 5 mins, add the water, the seasoning and let cook in instant pot/pressure cooker for 15 mins and into a regular pot for about 30-40 mins covered
– then uncover, add the rice, cover and cook in medium heat, in pressure cooker for about 15 more minutes and into a regular pot for about 20-30 minutes ( tip if you leave the rice to be cook for longer time it will become creamier, just add some more water so it want turn into a risotto)
– when is ready make the avgolemono, into a large deep bowl add 2 eggs and whisk/beat until doubled, then add the lemon juice and 3 ladles from the soup broth by whisking at the same time
– add the avgolemono into the soup pot, add a lemon zest and the mashed garlic, mix, let rest for 10 mins and enjoy with grilled bread
