I'm on a diet that prioritizes high protein and no added sugars, with a smaller focus on volume eating. I felt this spinach Goodles Mac definitely fit the bill of volume eating, though, as it was an absolutely giant bowl of mac and spinach for almost 50g of protein, without even needing to add a meat!

746 calories is a bit high, but I think it's reasonable to expect mac and cheese to be on the higher end calorie-wise, this is just a way to make it more filling, higher protein, and lower calorie than it would typically be. I also really loved how high fiber it was as well.

I bet adding an unflavored protein powder would make this even more protein-packed, but as it is it was delightfully cheesy, and the spinach added a very pleasant crunch.

I just mixed everything together in the pot and then put the heat back on for a little bit to slightly cook the spinach and melt the added cheese. I ate it all over the span of two meals so I can't speak on how it keeps.
