Grand Marnier balsamic fig toast and rosemary smoked ricotta
Ingredients:
5 rosemary sprig
1c ricotta
1tbsp veg oil
1lb figs, quartered
1 shallot, sliced
1tsp salt
3Tbsp balsamic vinegar
3Tbsp Grand Marnier
1 orange, zested
1 French loaf, sliced
parsley
Directions:
1. Preheat the oven to 400°F.
2. Smoke the ricotta with rosemary in a wok or pot for 10 minutes.
3. Heat oil in a pan and add the figs, shallot, Grand Marnier, balsamic vinegar, and a pinch of salt. Toss to combine, and once it starts simmering, transfer the pan to the oven and bake for 10 minutes.
4. Carefully remove the figs, then reduce the remaining sauce on the stove until it becomes syrupy.
5. Toast the baguette, spread the smoked ricotta on top, and layer with the figs. Drizzle with the sauce, zest orange over the top, and garnish with parsley.
