

These fish take FOREVER to prep. But they taste AMAZING.
Took 3 hours to get the prep for this fish complete, which is by far the most labor-intensive fish I’ve ever worked with.
Purchased 1kg (2.2lbs), and they’re EXPENSIVE, about 4.5 times the cost of fresh bluefin. Yielded 269 grams, barely over 13% yield. Each piece of nigiri is gonna have to sell for $13 piece for it to be worth my time, and that is about 1/2 of what I think most restaurants would charge for this particular fish.

the fish has an amazing mouthfeel, springy texture, very hard to describe the taste, they are delicious, tastes like a very nice, firmer white fish with a little kazunoko.
Certainly takes some knife skills
