Ultraviolet (***), Shanghai

  1. It was certainly the most memorable meal of all.

To me, it managed to accomplish what Alchemist (that we dined at just two weeks prior) could and should have done: synchronizing all the multimodal impressions at the same time to tell a consistent story. But that might have explained why Ultraviolet is closing due to bankruptcy while Alchemist is thriving. Seating only 10 people each night with a crew of 37 people creating this theatrical dining experience commands some of the highest price tags, but that might not be a sustainable operation with the climbing cost yet declining economy in post-Covid Shanghai.

Throughout the night there were lots of surprises (was told one thing but turned out another) and suspenses.

Each dish is a fun story to tell, complemented by a tailored catchy tune from a global playlist, paired with fantastic wines (included in the flight were Chateau Latour 2011, Chateau Musar Blanc 1997, Chateau d’Yquem 2008, Corton Charlemagne Jean Marc Millot 2019, Dom Perignon P2 2004, George Vernay Condrieu 2020….), served in the precise lighting controls and actions choreographed to the beats of the background music. What a feat to pull everything off without error.

Before the experience (pre show) and during the experience (intermission) it was packed with theatrics too. SPOILERS SPOILERS SPOILERS Some examples are: at the beginning we were told to drink some coffee with sugar because it’s gonna be a long night, turns out the coffee and sugar looking combo was a savory seafood soup! And after onboarding the bus to go to secret the dinner location, we were served gummy bears which turned out very savory. Later on there was one extremely fun course that continued the fun play of savory gummy bears. 🐻 At the end of the intermission we were told that the electricity went out 😂….

Even though maybe if we were to look at only the food itself alone it would not be on par with places like Geranium, overall the multimedia multimodal and multicultural experience was exquisite to say the least.

Do you know exactly when they are closing? Travelling in September to China and want to grab a reservation there…
