
I went to Korean BBQ the other day and they served this delicious salad, the star of the show being the seasoning. It was some sort of red powder, and the flavor was sweet/salty/a little tangy? I couldn’t get this salad out of my mind and called the restaurant, but the guy said it was “their secret” and wouldn’t tell me what it is lol. Any ideas?

It’s Japanese, but well known.
It’s called 재래기(jae-rae-gi) as a dialect or 겉절이(geot-jeor-i) in Seoul. We put in some vegetables like lettuce and marinate with soy sauce and chili powder.

This is what many Korean bbq places would have has their salad dressing. My mom makes this all the time and our recipe consists of rice wine vinegar, soy sauce, sesame oil, gochugaru (red pepper flakes), sugar, sesame seeds, and water. Optional ingredients are minced garlic, ginger, msg, and Korean corn syrup.
