  1. This pasta dish in reduced red wine and Pecorino Romano sheep's cheese comes from the hinterland of Rome, the Castelli Romani wine region. The name of this dish is in local dialect, but is also called Spaghetti ubriachi, and means something like 'drowned spaghetti'. The spaghetti is drowned in wine. There should be no cooking cream or paprika in it.
