Amuse Buche – mushroom broth. Extremely tasty and rich, beautifully clear broth.
Variations on Seafood – spot prawn, octopus, otoro, oyster, scallop. A fun take on a seafood tower, the mini taco was my favorite, but I enjoyed everything in this course.
Kristal Caviar – tomato, bonito foam, brown butter. This was paired with a 2015 Dom Perignon and it was probably my favorite course.
Honeynut Squash – Marcella, knafeh, chicory. The knafeh was a real delight, the salad a nice refresher and the Marcella a fun bite.
Black Bass – Scallop, Clam, Carrot, Sesame. My second favorite course, major SE Asian influence. The carrot sauce was amazing.
A5 Miyazaki Wagyu and Duck. Served with the pancakes and dips, these were interesting, the Wagyu also had cubes of beef tongue, and the duck served with a savory sausage. Good, not great.
Dessert was ice cream quenelles, sweet potato crullers, sweet potato Swiss roll, tart, and custard. The desserts were fun – but by now it was so much food I was overfull and wasn’t able to fully appreciate it.
Overall the service and presentation were flawless. The wine pairings quite good, but perhaps not worth the price tag. The meal was terrific, with some appropriate palate challenges, but wonderful execution. Not everything was a hit, but I appreciated the opportunity to try some new combinations. The dishes that excelled were quite outstanding.
