Reverse seared it using my rendered fat from the Christmas brisket. Fantastic flavor on the steak, a little on the chewy side; Is that common for Denver steak?

    I’ve found these are more tender cooked closer to medium. Let some of the fat render off and it adds flavor.

    Making pork shoulder but just whipped up a magnificent Denver on the side just for giggles. Some people give you a side of green beans. OP gives you a side of top-notch steak that’ll make you weep and leave your family.

    Yeah, Denver is a tough cut. Good flavor but really chewy. Overrated IMO.
