Ingredients:
2 tins Princes Tuna Steak in Spring Water
100g penne pasta, cooked as per packet instructions
½ red pepper, diced
50g sweetcorn
Handful black olives, sliced
5 cherry tomatoes, halved
1 tbsp mayonnaise
½ lemon, squeezed
Handful parsley, roughly chopped, plus more for serving
Salt and pepper to taste
Instructions:
1. In a mixing bowl, combine mayonnaise, lemon juice, parsley, salt, and pepper. Mix well and set aside.
2. In another bowl, add cooked pasta, Princes Tuna Steak, red pepper, sweetcorn, olives, and cherry tomatoes.
3. Drizzle with the lemon mayonnaise dressing and mix well.
4. Serve up into 2 bowls, garnish with extra parsley, and enjoy!
