Roast Tomato Chickpea Spaghetti

    * 500g cherry tomatoes
    * 1 can chickpeas
    * 4 cloves garlic
    * 1 red chili
    * 150g sun-dried tomatoes
    * 2 tbsp harissa (smoked chili)
    * 3 tbsp extra virgin olive oil
    * 250g spaghetti
    * 25g Nooch
    * Salt and pepper to taste
    * Fresh basil leaves

    ###Instructions

    1. Prep ingredients: Drain chickpeas, slice garlic, red chili, and chop sun-dried tomatoes.
    1. Roast: Combine cherry tomatoes, chickpeas, sun-dried tomatoes, garlic, chili, and harissa in a baking dish. Drizzle with olive oil, season, and roast for 20-25 minutes.
    1. Cook pasta: Prepare spaghetti, reserving 300ml pasta water.
    1. Combine: Stir Nooch and half pasta water into roasted veggies, toss with spaghetti, adding remaining water as needed.
    1.Serve: Divide pasta into bowls, garnish with harissa oil and basil.
