A little late posting but this was this year’s porchetta I made for Xmas lunch. As you can see from the photo I couldn’t even grab a pic before people started picking at the crackling. When you have a bunch of Filipino family telling you it’s better than lechon you know you did good.

Need to loop the audio and play it in my sleep.
Nice. I’ve done a couple of these in last year. The first one wound up with pretty hard skin, which was a bit disappointing. For the second one, I bought a jaccard and went to town on the skin side. I then rubbed it with salt and baking soda and let it sit in the fridge overnight dry out the skin. Turned out much better.
