Easier to spread cream cheese now, bagels should be this way.

I bet they taste just amazing 🙂

I intentionally make the holes on the small side so they’re easier to eat. They look great!

I also intentionally make the holes smaller so they fill in when baked. They’re better for sandwiches. You maybe made the holes a little too small haha… I usually make mine about 2.5-3 fingers wide and they expand during boiling/baking.

They look great! Tat’s how I personally like them.

I’ve seen them like this in NY before.

  7. ChartRound4661

I’ve done this many times. I think they are under proofed. Give them more time.

They still look delightful, F them holes.

now i’m just wondering why i’ve never made bagel balls and stuffed em with cream cheese like a jelly donut. 🤔

Look perfect for the tip and dip bagel trend of 2024!

At times, for me, it’s the other way round…

Bagels today, Donuts tomorrow. Let the revolution begin.

    I’d say, that’s a feature, not a bug.

  14. CallidoraBlack

They have these at Dunkin and they’re full of cream cheese. Just saying.

First time I made them that’s how mine looked (a little rougher than yours, honestly, but just as round!). I would make sure if you’re proofing overnight to let the dough come up to room temp first, and stretch the whole out a bit more if you’re looking for the traditional shape. I’m by no means an expert, so your results may vary. Regardless, these look great!

    They look like bellybuttons!

This is how it would look like if it follows Brita’s way of saying Bagels

Prob not the best reference but:

The hole in the middle of the bagel allows it to have a larger surface area, making it easier to consistently cook the bagel all the way through. This is important because bagel dough can be incredibly thick, which would make it difficult to know if the center was cooked completely if the hole was not there.

What is the hole in a bagel called?

They were called obwarzanek, and they got a huge boost in popularity thanks to Queen Jadwiga, a massively powerful Polish monarch who not only shifted the balance of power in 14th century Europe (via Britannica) but who was also canonized by Pope John Paul II.

I purposefully make them without holes so no cream cheese comes out lol. Looks delish!!

  20. Allforthe2nd

Cream cheese is stored in the balls.

Bagel sandwich buns! Like a pretzel bun, I suppose. Try a BLT, heavy on the bacon, especially on the everything bun, and report back.

I’ve only seen bagels shaped, and it’s been strands, connected at the ends and rolled at the joining seam. These look like they were shaped like I shape a sourdough couronne, by poking a hole in a pre shaped boule. I’m not saying bagels are only shaped the first way, but that’s the only way I have seen, and could be why the centers closed up.

You should contact the Church of Satan and tell them you’ve made unholey bagels.

  24. Redrockcod

It’s technique. Bagels are rolled and joined, not poked. Rolling changes the structure of the dough and makes it more organised, like the difference between forging and casting. If you wish, you can roll them tight so they end up with closed holes after proving.

Roll out (say) a 120g relaxed dough ball into a sausage long enough to wrap around your palm with about 5cm (2”) overlap. Press the join against the bench, and roll to similar diameter to the rest of the bagel.

The rolling gives it the bagel texture (inside), the gluten strands align like grain in wood, making a stronger, chewier product than you can make by piercing a ball, where the “grain” runs every which way like a bread roll

I wonder, do they sell bagel holes like donut holes?

  26. fuzzybunnybaldeagle

    But are they delicious balls?

  27. Affenmaske

I saw somebody on instagram putting a litle roll of parchment paper in the holes to prevent this
