The salsa is so tasty and the yogurt will go on a variety of main dishes.
MANGO AVOCADO SALSA:
INGREDIENTS: 1 Mango, 1 Avocado both pitted, peeled and diced, 1/3 Cup Finely Diced Red Bell Pepper, 3 Tbsp Chopped Fresh Cilantro, 1 Whole Line Juiced, 2 Tbsp Extra Virgin Olive Oil, Salt and Pepper to taste.
DIRECTIONS: Mix all the items in a bowl and set aside
CILANTRO-YOGURT SAUCE:
INGREDIENTS: 3/4 Cup Yogurt (plain nonfat), 2 Tbsp Chopped Fresh Cilantro, 1Tbsp Fresh Lime Juice, Salt and Pepper to taste. DIRECTIONS: mix all ingredients in a bowl and set aside or store covered in refrigerator.
SALMON/FISH COATING:
INGREDIENTS: 1 half lime juice, 1/2 Tsp Chili Powder, Salt and Pepper To taste, flour tortillas, chopped lettuce, DIRECTIONS: Cook the salmon/fish @ 425 degrees line a baking sheet with parchment paper, drizzle olive oil over fish/salmon and squeeze half of the freshly sliced lime, rub in the chili powder and add Salt and Pepper to taste. Bake for 15-18 minutes, ok to flip halfway through cooking or don’t, remove from oven and let rest for a few minutes before slicing.
