So I was a bit intimidated about making these arepas. I’ve never had them or used polenta before. I didn’t even know what polenta was!
They weren’t difficult to make. The texture was good and you could definitely taste the cheese. I felt that they were just a tad bit bland though. Maybe a different cheese or some added seasoning but I did enjoy them.
The chicken was really good, I liked the seasoning used. I don’t like raw veggies so I sautéed mine (onion, tomato, lime, seasoning) in the pan after I cooked the chicken and then topped with the cilantro.
This didn’t take long to cook. While the arepas were cooking in the oven, I made the chicken and both finished at the same time. I really did like this but felt that it was missing something, maybe a rice side would have been good.
That being said, I wouldn’t get it again only cause that is just too much arepas for me. They’re kinda big. I ate half with my meal and I’ll take another to work to eat with the other half of the chicken meal. I most likely won’t eat the other two and I hate being wasteful. But it would definitely be better for someone who has another person or family to share the meal with. If I had known, I would have looked up to see if I could have frozen half the polenta and made the rest another time. This was different and fun though.

Since it was my first time using polenta as well I followed their directions- next time I’m definitely seasoning it a bunch. I’m thinking smoked paprika, some cumin, etc. Would have really made it! I think HF fry seasoning would also be pretty good in it. Yours look great, we had terrible shaping them!
