This was actually purchased from a usually pretty nice place, maybe $30-40/entrees. Normally, the caprese there comes with fresh motz. Not sure what happened this time. My only thought is it was an inexperienced person who made it and read from a piece of paper how to build it, 3 pieces of sliced tom, 3 sliced of sliced motz ….perhaps the directions didn’t specify “fresh” motz.
