Recently I’ve found I prefer Denver if I sear it hard knowing it’s still not quite at the doneness I prefer. I let it rest and then slice thin and sear ~5 seconds a side. Not sure why but I just prefer it. Is there a name for this way of cooking?

    That looks really good but WTF is a Denver Steak? Okay I just looked it up. That’s a center Chuck steak. Those are one of my favorite steaks. The ones I grow have a lot of marbling. They are a fantastic cheap cut. In fact I prefer them to a strip a lot of the time. I like mine like this, a good sear, slice half inch, finish over a hibachi to really get that exposed marbling to start to crisp while leaving it rare and juicy. Good job bud.
