I only ever cook steak in the dark with limited light… just basically guess and nail medium every time… sear varies tho

I should probably add that I sous vide it at 115° for ~ an hour and 20 min and then it set for ~25 min or so then pat dried and seasoned it. Seared in beef tallow and butter.

Nice, our electric goes out regularly in the winter as we are remote. I end up grilling dinner outside with my flashlight for seeing a couple to a few times a year. On them cold, dark, pissing rain or wet snowy nights, that good outdoor BBQd dinner is quite a comfort. It’s almost like a feat saying FU to mother nature.
