Ingredients:
1 can of sliced mushrooms (25 cal)
3 tablespoons of miracle whip light, or 2 tablespoons of hellman’s light (60 calories)
1 can light cream of mushroom soup (150 calories)
3 tablespoons light sour cream (52 calories)
2 pouches long grain and wild rice (760 calories)
150g fage 0% yogurt (80 calories)
11oz shredded chicken, I used Costsco rotisserie (440 calories)
1 bag fat free cheese, I like cheddar (315 calories)
Preheat oven to 350. Put all ingredients into a bowl, except chicken and cheese. I don’t drain the mushrooms. Mix! Add the chicken, and mix. Divide into 4 oven safe containers, or 1 large dish if you prefer. Bake 30-40 minutes but keep an eye on it. While it’s baking, separate cheese bag into 4 parts. Rinse your cheese in cold water, and dry each part separately. Sometimes it sticks together and it’s just easier. When ready to eat, top with 1/4 bag of cheese and microwave for a minute. Stir, another minute, etc, until warm and melty. So good.
