Hasn’t hit its expiry date but i opened the jar today and noticed these white spots. I probably have cross-contaminated with other cutlery, though i can’t say for certain. The jar is basically full, should I throw it out? I’m not particularly a kimchi expert.

It is a type of fungus that occurs during the fermentation process. However, it does not affect the human body, and in Korea, the part is washed with water and eaten as white kimchi.

Of course, there are a lot of people in Korea who just throw that part away. It’s just unpleasant on the surface. So you can just throw away the white part and you can eat the rest.

I’d just scoop out the top layer, wipe the inside with a paper towel, then transfer to another jar.
